
Setting the Scene:
Spring marks the beginning of farmers markets and fresh fruit and veggies in abundance! And with that comes a re-found desire to eat a little healthier while slowing starting to come out of winter hibernation mode. And now with baby just 7 weeks away (woah!), I wanted to start making some easy, healthy breakfasts that I'll be able to put together in no time at all and grab without feeling a twinge of guilt, but that is still satisfying! Que these overnight oats. You can't really mess up overnight oats, but I think I finally discovered my favorite, winning combination of ingredients for the perfect batch, and you can bet these will be in my fridge all summer long for a quick and easy breakfast.
Time: 10 minutes prep, overnight in the fridge
Serves: 3
Ingredients:
1 cup of old fashioned oats
1 cup of plain Greek yogurt
1 cup milk (of any kind, I used unsweetened original almond milk)
1 green, granny smith apple
2 heaping tbs sliced almonds
1-2 tbs chia seeds
2 tbs agave (can substitute honey or brown sugar)
1 tbs flax meal
1 tsp cinnamon
1 tsp vanilla
1/4 tsp salt
1/4 tsp nutmeg
Instructions:
1. Slice the apple, very thin slices! Leave the slices stuck together and turn the chuck on it's side to slice again into long sticks. Cut sticks in half.
2. Mix all ingredients together.
3. Cover and place in fridge overnight. Easy peasy!
